As a third-year Food Technology student, I’ve had several opportunities to experiment with food processes and solve practical problems, both in the lab and through projects. For example, I worked on a small project to improve the shelf life of a canned product by testing different natural preservatives. I used basic lab equipment and recorded the changes over time, which helped me understand thermal processing, microbial safety, food safety regulations and preservation techniques. I also enjoy problem-solving during practicals, especially when formulas or methods don’t give expected results—I'll troubleshoot by adjusting temperatures, pH levels, or ingredient ratios. Apart from hands-on work, I regularly read technical articles and journals like those from FSSAI or Food Control and the ones provided by my lecturer to stay updated on food safety standards, new processing technologies and case studies. This helps me connect what I learn in class to real industry applications and builds my understanding of current trends in food technology.
