  • Company Overview: Faircape Health Tokai estate offers comprehensive sub acute rehabilitation and outpatient services. The facility consists of 83 beds and as chefs provide food for very specific diets set out by the dietician, ensuring that they receive meals consisting of all their dietary needs. Tokai estate provides service for both health care patients as well clubhouse residents.
  • Leading and managing a kitchen team of chef in two separate kitchens
  • My responsibilities included but are not limited to the following, leading and managing a team of chefs that work in two separate kitchens. Ensuring that my sous chef works well and manages the healthcare kitchen efficiently. Responsibilities also include preparing cafe meal items for residents, plating healthcare breakfast, lunch and dinner service. As senior chef, I am required to complete daily jotforms pertaining to kitchen lock up procedures, healthcare kitchen samples, kitchen cleaning and labelling as food temperature logs. Responsibilities are not limited to one specific village, as Faircape group consists of 6 villages in total in the Western Cape and the role as senior chef requires you to be flexible and work in most villages dependant on your location. The role is very demanding and requires you to adhere to strict regulations and policies and ensure that you team do as well. It broadens your knowledge on dietary requirements and limitations of patients.

  • Company Overview: Cassia Restaurant is a 4-star restaurant located on Nitida Wine farm, in Durbanville Hills. Seating a total of 120 guests with views of Drakensberg Mountains. The restaurants guests include mainly tourists during season time, as well as business groups, which are drawn in by conference packages which are offered. Sage boardroom seats 14 and Saffron 200; a prime banqueting and conference location, with views of the lake. The views at the restaurant especially attracts couples who are looking for wedding venues, as it offers the courtyard that can be used for the ceremony and Saffron for the reception.
