  • Ensuring adherence to contractual, customer-specific, regulatory and internal requirements as per specifications.
  • Forecast ongoing implementation (and where possible, improvement) of the Quality and Food Safety system through the systematic implementation of the relevant food safety requirements as defined in the Food Safety RACI Matrix and relevant policies and procedures (SOP’s).
  • Achieved a reduction in foreign object customer complaints through daily plant foreign object hunt, continuous daily evaluation of X-ray data and rechannelling nonconforming product.
  • Organoleptic and analytical evaluation of all raw materials, intermediate (filling and pastry checks) and finished products.
  • Liaise with departmental structures i.e.
  • Production, maintenance, supply chain and quality teams to effect continuous improvement.
  • Supervision and on-the-job training of Quality control/assurance interns and food handlers and conduct post-training assessments.
  • Monitoring of the internal cold chain (OPRP), and all CCP’s (Cooking, X-rays and Metal detectors, Baking).
  • Audit internal and Service Provider standard adherence and address daily troubleshooting in the production environment.

  • Ensure all equipment is serviced according to the calibration and service schedule and by certified/accredited suppliers.

  • Provide onsite supervision during Graveyard shift, Emergency coordinator and IOD investigator, ensuring Safety procedures are executed during operation of equipment.
  • Verification of deep cleaning and sanitation using ATP Swabs and visual inspections, verification of equipment Stripping in accordance to stripping schedule, verification of deep cleaning and sanitizing chemical concentrations using test kit Process aids, ensure proper waste removal using correct procedure to waste holding area.
  • Collate and analyse data against defined parameters, Compiling statistical data and narrative reports regarding Quality Assurance, Maintain current and accurate records of all relevant communications, audits, corrective action plans and monitoring procedures Manage on hold/rejection and Stock-age analysis.
